The Crumble

Everyone loves crumble! And you can too. Now, some people with gluten intolerances also can’t handle oats. But if you can seek out the guaranteed wheat-free kind, the gluten levels are so very low that many countries even count oats on their gluten-free food lists. The usual problem is that commercial oats are processed on equipment that also processes wheat flours. Buying certified wheat-free oats may be just the thing to safely bring back oatmeal, granola, cookies, and fruit crumble into your diet!
Anyway. On with the show!

Ingredients:

2 cups berries or sliced fruit
2 tbsp sugar
2 tsp cornstarch
1 1/2 tsp water
1/2 tsp lemon juice
1/2 cup pure quick oats
1/4 cup flour
1/4 tsp guar gum
1/4 cup packed brown sugar
1/2 tsp cinnamon
1/4 cup cold butter or margarine

 

Directions:

Grease a 1 qt baking dish or casserole.

Put fruit into dish.

Mmmm....blackberries.

Mmmm….blackberries.

Combine sugar, cornstarch, water, and lemon juice. Stir until smooth and pour over fruit. Combine the oats, flour, guar gum, brown sugar, and cinnamon. Mix well. Cut in the butter until crumbly.

Sprinkle oat mix over the fruit.

Bake uncovered at 375° F for 20-25 minutes, until top starts to brown.

Bake until slightly browned

Try not to eat it all at once!
